Organizing a tournament... Need some input

Hey guys,
I have a regular group of friends that I always golf with, and we decided to put together a small tournament for bragging rights and some friendly competition. There will be 8 of us, so the goal is to get two tee times in a row at one of the courses we regularly play. We're going to do four teams of two.
Here's the thing.. Our skill level ranges quite a bit.
Two of the guys we have are scratch golfers (let's give them a 2 hcap at this point since they haven't played much lately), one is about an 8 hcap, a couple are in the 23-25 range, and a handful are quite a bit higher, and usually shoot around 105-115 on a roughly 71/115 rated course. Note, that we only have one 'official' handicap, and that's mine at 24.
I think we figured out our teams to make things about as even as we can, and esentially that will involve pairing thre three best players with the three worst, and the other two playing together.
The thing is, we're kind of worried that the teams with the three best players will have a slight advantage despite how even our projected scores may seem on paper, mainly because they have played in many tournametns, etc, and are a bit more familiar with playing under pressure. I understand this isn't the PGA, but hell, we all get pretty competitive in everything!

What's the best way to sorta even it out? We'd like to all play from the same tees, but that might not happen, sicne I know one of the guys won't be able to play from the back (even though there's virtually no difference, it's a mental block for him). So, we thought of maybe doing one player from the back, one from the middle. Also, I thought of capping scores for the worst players at 10 max per USGA rules for official handicap purposes.
What other suggestions do you have?
Should we maybe do match play, or high-low, instead of stroke play? What have you guys done in the past to even it out and make it a little more competitive for everyone?
